MEAL PLAN & RECIPES

Below are recipes to replace foods when going allergen free ......... You may feel like you are losing everything when really as you will see that you are gaining everything through this great change as I have seen the light after eating unnatural and unhealthy foods, not realizing what I was doing to my body by eating them. These are recipes that when we changed our diet I remember that the kids loved to eat and couldn't eat anymore until I found recipes and ideas on how to incorporate them back into our lives, now our children can enjoy them once more. I will be including product lists, grocery lists and meal planning to help you get started off in the right direction for success in you learning how to eat differently and how to embrace the change for you and your family.......... so stay tuned for more to come:

Eating healthy can be simple, fun and exciting!

Allergen free Tortilla Chicken Strips

 

Ingredients:

 

6 1/2 Cups Que Pasa Tortilla Chip 

1/2 tsp garli powder

1/2 tsp chilli powder

1/2 tsp onion powder

1/4 tsp salt

1/4 tsp pepper

2 tbsp olive oil

5 medium size boneless skinless Chicken

 

Directions: First get a sheet pan ready with parchment paper then cut chicken into strips, season with salt and pepper and coat chicken with olive oil. Set chicken aside then put Tortilla Chips in food processor and pulse until a coarse crumble forms. Add all seasoning to Nacho crumble toward the end. Lastly, bread chicken strips with seasoned Nacho crumble. Making sure to push crumble right onto chicken and chip begins to stick.

 

Bake at 400 for 20- 25 mins flip half way thru

Also these can be frozen for future meals

Meal Planning

Brown Rice Bread

Gluten Free, Dairy Free and Yeast Free 

Dry Ingredients:

 

3 cups brown Rice Flour

3/4 cup arrowroot or tapioca flour

1 1/2 tsp of baking powder

3/4 tsp baking soda

3/4 salt

2 tbsp Psyllium Husk

 

Wet Ingredients:

 

2 cups Almond milk

3 large eggs

1 tbsp maple or honey (optional) I put it in

 

First put physllium husk in 1/2 cup of almond milk, let sit for 5 minutes then mix all ingredients together and put in an oiled bread pan and you good to go......

To change it up you can add one tablespoon of cinnamon to dry ingredients then once all ingredients are combined fold in 1 cup of raisins for Cinnamon Raisin bread.

 

Bake at 350 for 65 mins

Let rest for at least 20 mins

Mac N Cheese

Gluten Free and Dairy Free 

 

Ingredients:

 

454 g(1 bag) Organic Brown Rice Fusilli or

brown rice elbow noodles

1/2 cup Bob's Red Mill Nutritional Yeast

1-2 tbsp Brown Rice Flour

1 heaping tbsp Vegan Butter or Coconut Oil

1 cup Almond milk

1 tsp dijon mustard

1 tsp tamari soy sauce

1/2 tsp garlic powder

salt and pepper for seasoning

 

Directions: Get a pot of water boiling for your pasta and once at boiling point add pasta(cook that according to package instructions) mean while In a Medium saucepan you need get a rue started to build the base for your dairy free cheese sauce. Once the saucepan is heated add the butter allow that to melt and the adding the brown rice flour. The consistency should be a bit lumpy at first then cook for about 1 minute before slowly adding the Almond milk. Then finally adding Nutritional Yeast, mustard, soy sauce, garlic powder, salt and pepper to taste. Combine noodles with sauce. Serve to your little kiddies. yum. yum

 

For also another little hint of texture and flavor you can sprinkle with some vegan parmesan cheese

 

Tip: Rinse noodles under cool water to get rid of the sticky starch before adding to sauce.
